What's for Dinner? Week of 5/4

Last Sunday, I was driving through Zion National Park on my way home from Ragnar Trail Zion. The rest of the day got a bit crazy, and I never got around to writing my weekly recap / menu planning post. In fact, I never even made a meal plan. Booo.

Last week was a bit crazy at work - training in a new guy. It's not a very good excuse, but I think it was probably a factor in the disappointing results of last week.

Monday, 4/28 - LAZY!

Tuesday, 4/29 - LAZY!

Wednesday, 4/30 - LAZY!

Thursday, 5/1 - LAZY! But I did start the #FFYoga Namaste in May challenge with Chair Pose.

Friday, 5/2 - LAZY! Except for Downdog.

Saturday, 5/3 - Race for the Cure 5k, which turned out to be 3.7 miles. :( I convinced Jeff to do this one with me, so we weren't doing it for speed - just trying to get through it. It was a great morning!

Sunday, 5/4 - REST. But I WILL get in the yoga pose of the day. Happy Baby.

What's next? I still need to get in my final #5bythe5th 5k. I suppose I could count yesterday's race, but I want to try to run it fast, so I'm hoping to get it in tomorrow morning before work.

what's for dinner?

We're heading to LA / Catalina Island on Friday for a weekend getaway. We'll be SCUBA diving, attending my cousin's wedding, and relaxing by the ocean. I hope to get in at least one run, too.

We'll probably need to spend most of our weeknights preparing for our weekend trip, so I'm keeping dinners super simple.

Monday - Baked pasta

Tuesday - Leftovers

Wednesday - Bean dip with tortilla chips

Thursday - Leftovers

Friday - Dinner at Antonio’s Pizzeria & Cabaret

Saturday - Cousin's wedding at Catalina Casino

  3. I actually almost went to Zion NP last weekend, its been a while and I wanted to get some hiking in. But life got in the way and I wasn't able to go.
    How was the Zion Ragnar? I bet that's one beautiful course!

    1. How funny?! Ragnar Zion is actually at Zion Ponderosa Ranch not in the national park, but yes, it's very pretty there.

  4. Dinners have been simple at our house too due to travel. Lucky you with some bonus mileage at the Komen race!

      I guess the bonus mileage was fun, but I'm sure glad I'd decided to run/walk it with my husband instead of shooting for a PR. ;-)

  5. I definitely didn't like the extra long 5k at the time, but at least I got in a little extra mileage. It will be my first time scuba diving in the ocean. I'm excited, but also a little nervous.
