What's for Dinner? Week of 7/6

I am loving this 3-day weekend! Of course, I awoke with a start this morning thinking it was Monday. What a relief to realize I still had one more day to the weekend! Whoo hoo!!

#HalfTrainingWithJeff continues to go well. We just finished week 3, and Jeff is still feeling good about continuing the training and running the full half on 8/10. I think it's so much better training with someone. Less temptation to skip a workout here and there. :) Of course, we are both kind of hurting after yesterday's 7-miler.

The pain in my butt has returned with a vengeance.

BUT I'm still going to try for a 1-mile run and some yoga today, but if it continues, I might have to consider not running my own #ETCRunStreak. I'd still love you to join my birthday party, though!

Sunday, 6/29 - 5.14 miles (1:06:59). LBD Challenge Day 18 - 40 jumping jacks/40 burpees/40 high knees.

Monday, 6/30 - LBD Challenge Day 19 - 40 bridges/40 squats/40 lunges. Swimming laps (11:45).

Tuesday, 7/1 - 3 miles (38:00). LBD Challenge Day 20 - REST

Wednesday, 7/2 - LBD Challenge Days 21 & 22 - 45 jumping jacks/10 burpees/45 high knees/10 burpees/90 sec plank/10 burpees/45 dips/10 burpees/40 mountain climbers/5 burpees

Thursday, 7/3 - 2 miles (24:32). Night run.

Friday, 7/4 - Swimming laps (17:00+).

Saturday, 7/5 - 7 miles (1:37:05). Lots of post-run yoga, stretching, massage.


30 Day LBD Challenge Update - I started this challenge on 6/11, but I guess I haven't really be doing a formal update on my progress - other than noting it in my workouts. It's a very tough challenge! I've missed a few days and rearranged a few others. It's going to end up taking me 32 days to finish, provided I can stick to it this week! I've never done so many burpees or held a plank for so long! As for results? I'm totally kicking myself for not taking any before pictures. :( I'm not really sure that I've seen any progress. In fact, I feel like my belly is even bigger than it was. Booo.

What's for Dinner next week? No Bountiful this past weekend, but we did pick up some produce during our weekly shopping trip. Yay! Instead of breaking down my meals by day, I tried organizing my meal planning a bit differently this week - and including plans for breakfast, lunch, and snacks, too. It seemed more difficult to actually put together a shopping list this way, so we'll see how it goes throughout the week.

  2. It's definitely helpful to include the breakfast/lunch items... I usually have a general idea in my head, but don't write it all out. Keep up the great training!

    1. I wonder how it would work with polenta or corn meal as a breading instead of flour. Maybe I'll give that a try this week.

  8. I hope you like the potato salad! I love the idea of an egg stuffed baked potato. I have a bunch of sweet potatoes I should try that with :) I also loooove apples + peanut butter. I'll have to try your dip, soon!
