Good morning, and Happy August to you!!
I've already gone for my 1 mile run and did some yoga on the patio. There is some zucchini bread baking in the oven, so it seems like a perfect time to link up with the Ultimate Coffee Date!
If we were having coffee this morning...I'd tell you that I love August, because it's MY BIRTHDAY MONTH!! Whoo hoo. Let the celebrating begin. :) Ok. So, maybe I started celebrating on July 5th with my birthday streak. Running or Yoga or both or any combination. Or maybe not even a streak at all. YOU CAN STILL ENTER TO WIN SOME FUN PRIZES! If we were having coffee this morning...I'd also tell you about how excited I am for my actual birthday weekend. I still need to firm up some plans, but the biggest, most fun event of the weekend will be running the E.T. Full Moon Midnight Half Marathon with my husband. It will be his first half. What a fun birthday present for me! Plus I'm working on a super fun costume to wear. Hopefully I can get it all pulled together with just a week to go!
If we were having coffee this morning...I'd probably ask your opinion on zero-drop shoes. Pros? Cons? Jeff has kind of become my personal shopper, and wants to get me some new running shoes. Isn't he the best? He's new to running, but has probably done more research on how to run and the best shoes than I ever have. He likes the idea of adjusting to zero drop, and I don't really have an opinion, so I'd love to hear your thoughts.
If we were having coffee this morning...I'd confess that it's been months since I've ridden my bike. Jeff and I have a 30-mile ride coming up in the beginning of Sept, and I'm a little nervous about it! Especially, since I'll be running a half marathon the very next day! I'd ask if you were going to be in CA for the Ventura Marathon weekend, because it's going to one awesome party!! :) If all goes well, we are planning on a swim and bike ride at Lake Mead tomorrow. Fingers crossed it all goes well!!
If we were having coffee this morning...I feel like I'd have more to say, but I can't seem to think of anything else right now, so I'd just sit back, enjoy my cuppa, and ask about your weekend and what else you might have planned for the rest of the summer!

Ultimate Coffee Date - July 2014
Did you enjoy a fabulous 4th of July? We didn't really do anything. Spent a little time in the pool for some cross training and fought the crowds at Walmart for our weekly shopping trip. Now we have two full days to do whatever we want and not have to worry about running errands.
But first, it's coffee time!
If we were having coffee this morning... I'd tell you how great half marathon training is going with my husband. We're heading out for a 7-miler this morning. This will be by far the longest distance Jeff has ever run. We're dropping Genie (our car) off for her 30,000-mile check-up and we'll hit the road instead of simply killing time at the dealership.
If we were having coffee this morning... I share with you some of the creamiest, most delicious fruit dip that I made the other day. And, of course, I'd share the recipe.
If we were having coffee this morning... I'd definitely ask you if you were going to join me for my birthday party. I'm so excited about this run and/or yoga streak, and I really want it to be the biggest party ever, so the more the merrier. :-)
If we were having coffee this morning... I'd tell you how I've been fighting a major sweet tooth lately. And by sweet tooth, I mean chocolate. Seems like if there isn't chocolate involved, I just don't feel satisfied. I'm trying to grab fruit when I have a sweet craving, but it doesn't seem to help. Though my fruit dip did help a little. I'd also ask how you deal with unhealthy cravings.
If we were having coffee this morning... I'd tell you how I feel like summer is slipping away. There are so many things I'd like to do this summer, and I feel like I'm running out of time. Good thing I live in Vegas, so summer lasts a bit longer than other places. :-)

Creamy Peanut Butter Vanilla Fruit Dip
Ingredients
Cooking Directions
- 6 oz Yogurt, plain, unsweetened
- 1 Tbsp Peanut Butter, heaping
- 2 squirts Pure Via® vanilla stevia liquid
- 1/8 tsp Cinnamon
- Mix all ingredients together in a small bowl until smooth and creamy.
- Serve with apple slices, bananas, grapes, or your choice of fruit.

What's for Dinner? Week of 6/29
Hard to believe that it's already the end of June! And even harder to believe that it was just last weekend that I was visiting my family in MN. Guess it's a good thing when the week flies by. PLUS this is a short week with the 4th of July on Friday. Don't you just love it when the 4th lands on a Friday! Yay!! 3-day weekend!!!
